A CUCKOO IN THE NEST
After flying, we all need a little nest to rest our feathers. Here's another tasty vintage delight made with apples called Bird's Nest Pie, because when flipped upside down it slightly resembles a bird's nest. This no crust pie can also be made with peaches.
4 to 5 medium apples, peeled and sliced
2 cups all-purpose flour
1 cup sugar
1/2 tsp baking soda
1/2 tsp cream of tartar
1 cup sour milk (*see below)
1 egg
topping:
1/4 cup sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
- Preheat oven 350° F. Divide apples evenly between 2 greased 9-inch pie plates; set aside. In mixing bowl, combine flour, sugar, baking soda, cream of tartar, sour milk and egg; mix well.
- Divide batter and pour over apples. Bake for 25-30 minutes or until pies are lightly browned and test done.
- Invert onto serving plates (so apples are on the top.) Combine all topping ingredients; sprinkle over apples. Serve warm.
*(To sour milk, place 1 tablespoon of white vinegar in a measuring cup; add enough milk to equal 1 cup. Let stand 5 minutes.)
